Oni's end of the round kanji

Does anyone know the kanji that appears when oni ends the round with his raging demon?

I wouldn't know because I haven't played the game, but if you can post a clear picture where the kanji is showed I can probably tell you what that character is and means, if that's what you were asking.

It says "Oni" what means "Demon"

While I was looking for the kanji character for oni, I accidentally stumbled upon this thread. http://shoryuken.com/forum/index.php?threads/onis-kanji.138812/
The thread discusses oni’s end of the round kanji and it appears to be a combination of the kanjis god and demon 神 and 鬼 along with some modification.

You're welcome, k1u1 =).

After seeing the picture you posted, I've come to the same conclusion you mentioned.
Considering that some parts of the characters are hidden behind Oni so it can't be said for sure, that seems the combination of the two characters "神", "god", and "鬼", "demon", "ogre". It's like if they disassembled the character "神" and replaced the "申" part with "鬼".
